Grapes
The Saperavi grapes flourish on the steep slopes of the village of Chailuri in Kakheti, at an altitude of 800 meters above sea level. These vines, over 30 years old, are deeply rooted in calcareous, mineral-rich soil. During the hot summer months, the limited water supply encourages the roots to grow deeper into the earth, enhancing the grape's concentration and complexity.
Process
The grapes for VAZIS XIDI Saperavi 2017 N°1 were gently pressed in the wine cellar, and the resulting must was fermented on the skins in a qvevri—a traditional Georgian clay amphora buried underground. Following fermentation, the wine was further matured in a second qvevri, refining its depth and character.
Vintage
The 2017 vintage was shaped by a hot and dry summer, with temperatures reaching up to 37°C, resulting in an exceptional concentration of fruit flavors in the grapes.
Character
Fine yet well-structured tannins give the wine a soft, elegant, and complex character, with a long, harmonious finish. Its bouquet is reminiscent of violets, blackberries, black cherries, plums, licorice, and dark chocolate. With its refined balance of fruit and structure, VAZIS XIDI Saperavi N°1 pairs beautifully with poultry, Mediterranean cuisine, vegetarian dishes, and a variety of cheeses.
